I get thats its a pretty niche request, but it would be pretty amazing.
Theres 3 things that I'm thinking of specifally, 2 which should be somewhat easy to implement

1. Fix the controls menu. When using 3 monitors with nvidia surround resolution of 5760x1080 then the controls menu is comletly broken. The top part is stretched across all 3 screens making it giant while the actual controls are not visible and cant scroll down to them.

2. Add an FOV slider. It will make the disorientating stretching on the edges of the outer monitors much better.

3. Just support triple monitors better. I remember a racing game from a few years back that used 3 cameras (1 in the middle, 1 on left, 1 on right) and each one would display to the respective monitor. They had them at an angle, similar to how the physical displays would be setup. Something like that would probably make this game have one of the best triple monitor support of any sim
